Brown ale Fajitas


Brown ale fajitas: 

1# chicken cooked 
1/2 cup nut brown ale 
1 tablespoon taco seasoning

2 medium onions 
4 red peppers
1 cup summer session ale
2 tablespoons oil  

1 ripe avocado
Sour cream
Cheddar jack cheese 
Cholula sauce 

Flour tortillas 

Sautée / cook chicken, beer and seasoning with lid until ready 


Sautée / cook peppers, onions, ale, and oil until done but still crisp.


Put all in a tortilla and enjoy. 



While waiting for your fajitas to cook.. 
Why not make some homemade pico de gallo: 



Pico de Gallo:
1 onion 
6 Roma tomatoes 
1 jalapeño
1 lime 
1 tablespoon minced garlic
Celery leaf (optional cilantro)

Core / remove Guts of tomatoe and dice


Dice onion and jalapeño


Chop celery leaf and add with garlic

Juice lime, add and serve.


We had ours with lime tortilla chips!!

Buffalo chicken blue cheese pizza


Buffalo chicken pizza:

1# whole wheat pizza dough ball
(From your local grocer or homemade) 

Buffalo sauce: 
1/2 cup franks buffalo sauce
1/2 cup cholula (hot sauce)
2 tablespoons butter
2 tablespoons crushed red pepper
1 tablespoon (brown sugar bourbon seasoning) 
2 tablespoons worstechire sauce
1/4 cup honey 

1 # grilled chicken

1/2 cup blue cheese dressing
1 cup cheddar Jack blend
1/2 cup crumble blue cheese 

Preheat to 425 degrees 

Par bake crust 5 minutes

Pan fry chicken in buffalo sauce while waiting

Spread on blue cheese dressing as sauce, add buffalo chicken & sauce mix, add cheeses and bake for 8-10 more minutes. Done!!

Homemade Sloppy joes


Homemade sloppy joes 

1 onion
1 green pepper 
3 stalks celery 
1/4 cup oil 
1/8 cup maple syrup 

1 pound beef 
2 tablespoons minced garlic 
1 tsp. Cumin. 

12 ounces basil tomato sauce
1/4 cup ketchup 
3 tablespoons honey
4-8 tablespoons cholula 


Cook "the trinity" (onion, peppers, celery) until softened in maple syrup and oil. 

Add beef, cumin and garlic to trinity until browned, strain all and return to pan

Add tomato sauce, honey, ketchup, worstechire and hot sauce. 

Warm, reduce liquids if necessary & serve! 

Optional... Serve your joes with some homemade cloeslaw: 

Lemon jalapeño coleslaw: 

1/2 a bag of cole slaw mix
2 tablespoons rice vinegar 
1/2 cup cashews 
1/4 cup craisins
1/4 cup mayo
1/2 chopped green pepper
2 stalks chopped celery
1 tablespoon minced garlic
1/4 cup jalapeño lemonaise
Salt & pepper

Nutella Latte

2 Tablespoons Nutella
2 shots of Espresso
1/2 - 1 cup steamed whole milk
