Kale red onion lemon basil Mac


Kale red onion lemon basil Mac-n-cheese 

Buch of kale
1/2 red onion
Bunch of broccoli (florets)
1T garlic 
Salt / pepper
1/4 c olive oil 

1/2 box medium shells

1 3/4 cup half and half
8 oz aged cheddar
1/4 c maple syrup 
1T garlic 
Salt / pepper
1/4 c butter
1/2 c flour 
(Milk to thin or less flour) 

Sautée everything in the first group

Cook noodles 
Heat up half and half. 
Add everything but butter and flour.
In seperate pan melt butter and whisk in flour.
And roux mixture to cheese half and half
Then combine.
Crush chips 
And eat! 


I had some forged mushrooms from a friend and sautéed them in a little oil and just yum!!!!

Spinach squash amazing-ness


Spinach squash amazing-ness! 

9 lasagna noodles 

2 bundles spinach 
1 large onion
1/4 cup olive oil
Salt & pepper

Garden vegetable cottage cheese 

2 tomatoes
Fire roasted diced tomatoes 
2 T oregano 
2 T basil 
1 can tomatoe paste
1 T Siracha

1 acorn squash 
1/2 cup maple syrup 

Alpine cheddar cheese 


Mix tomato mixture so it can meld  

Cook acorn squash (400 for 35 min with some olive oil) scrape out of skin and mix with maple syrup.


Cook spinach with onions oil and pepper 
2T garlic optional till desired 

Aldente the noodles and now your ready to begin layering!! 

My layers: (bottom to top!)
1/2 the Sauce

3 noodles

All the spicah mixture & 1/3 cottage cheese 

3 noodles

All the squash mixture & 1/3 cottage cheese

3 noodles

1/2 the sauce, last 1/3 cottage cheese & top with the cheddar! 

Cook in crockpot (crock pot)  @3-5 hours
Or in oven 325 @ 25-30 min. 

IMPORTANt: 
Let lasagna cool!!!!! That's how you get a gorgeous looking slice, and all the flavor profiles!!
