Muhammara or mama-hoo-rah!


Mahammara or mama-hoo-rah! 

3 1/2 large roasted red peppers 
1/2 cup walnuts 
2 T tomatoe paste
3 T olive oil 
2 cloves garlic
1/4 t cumin
1/4 t pepper flakes
1/4 t kosher salt
1 T lemon juice 

Add to each below to make either:

For mamhammara 
1/2 cup heaping multi grain bread 
1 T pomegranate molasses

For mama-hoo-rah
1 can white beans 
1 T maple syrup 

Start roasting pepperS



Gather other ingredients 


Peel the black off the peepers and deseed 


I made one of each version:


Blender and purée to desired texture.. Add more olive oil if needed!! (Or Siracha / hot sauce of choice would be desirable for heat!!)


Eat, and enjoy the heck out of it!!

Apple blossom croissant




4 apples (the bigger the better, larger blossom!) 

1/2 cup (1-2 t per roll up)Cinnamon sugar 

1 12" x 8" piece of dough 
(Strips 1" x 8" = 12 strips = 1 muffin tin

Powder sugar to garnish / dust 


Slice apples paper thin.. Think about bending them, if there two thick they will just snap in half! (Or you could soften them first with a little sugar and lemon juice on the stove to make them more pliable...) 


Prepare your 1"x8" piece of dough 
Roll as thin as you can!! 


Line up apple slices along the middle of the dough and sprinkle with cinnamon sugar. Then fold up the other half of the dough to hold the apples in place



Roll it up


Place in buttered muffin tin 


Bake. 350 40 minutes or so.. 

And well-awe! 


With more practice they'll get better

Maple-bacon apple & Butternut squash soup


Maple-bacon apple & butternut squash soup

12 oz bacon

1 1/2 med squash (1/2" diced) (8 cups)
3 med turnips (1/2" diced) 

1 1/2 yellow onions
3 honey crisp apples 
2 T sage

4 cups chicken broth 
1 can beer
2 T Siracha 
1/2 cup maple syrup 


Start, chop bacon and cook to crispy 
Place on paper towel with slotted spoon 
Prep squash while you wait

Then brown and cook squash and turnips in bacon fat 


Cut apples, onions and sage 
Cook with squash about 8 minutes


Add broth, beer syrup and everything but the bacon. Bring to boil 
Then simmer for 15-20 minutes 

Blender with 3/4 of bacon use rest for topping 


Eat
Top with favorite things!!!
