Vermont Venison ale chili

Vermont venison ale 

2# venison
1/2# maple bacon
2 med yellow onions
1 med red onion
2 jalapeños seeded
1 red, yellow, & green pepper diced
1/4 of 8 oz can chipotle peppers
3 t minced garlic
1/4 cup balsamic
4 T chili
1 T cumin
1 T salt
1 T pepper
1 T cinnamon
1/4 cup honey
1 bottle beer
1/2 cup red wine
1 can diced tomato 
1 can crushed tomato 
1 can kidney beans
1 can black beans


Cook / sear venison then strain and set aside 

Start bacon in another deeper dish to cook off fat to cook veggies & peppers in


While bacon cooks dice onions & peppers


Remove bacon from pan, leave fat, set bacon aside, add peppers and onions and stir constantly for 5-8 min.


Add garlic and balsamic for 2 min


Add spices 1 minute


Add wine, beer, & tomatoes, let simmer 45 minutes

15 minutes before done add washed and strained beans! Then too with cheese and sour cream and scallions! 
And devour!
