Chewy Cranberry nut pepita bars


Chewy cranberry nut pepita bars 

1 3/4 c oats
3/4 c rice puffs 
1/2 c coconut
3/4 c pepitas 
1/4 c flax
1/4 c sesame
1/4 c almonds
1/4 c pecans 
1/4 c walnuts 

2 t salt
2 t cinnamon 
2 t vanilla

1/2 c honey
1/2 c peanut butter 
1/2 sugar in the raw (working on getting rid of this!) 

1 c dried cranberries or cherries 

Toast all but oats, puffs and cranberries  


Heat up honey mixture 
Combine all


Press into 9x13 pan 
Let solidify overnight

Minestrone


Minestrone 

2 c diced red potatoes
2 c chopped carrots
2 c chopped cabbage
2 c chopped butternut squash (or zucchini) 
1 yellow onion
2 c fresh green beans
1 1/2 c chopped celery

3 minced garlic cloves
2 t dries basil 
2 t fresh rosemary
1 28 oz can diced tomatoes
8 oz tomatoe paste
32 oz beef broth 
2 c water 
8 oz spruce beer

1 can cannellini beans
1 can kidney beans 

Shredded cheese of choice on top


Combine everything but beans and cheese in Dutch oven! 


Cook 3 hours medium.. Or put on wood stove all day.. 

Last hour add beans... Throw a log in.. And get ready !!!


Add cheese!!
And eat the crap out of it!! 

Serve with hot sauce and maple syrup of course!! 😁👍

Hot red pepper jelly



Hot red pepper jelly

8 red peppers
18 jalapeños
4.5 cups cider vinegar 
1 t hot red pepper flakes 
9.75 # organic sugar
18 oz liquid pectin

6 # blueberries 
15 cups sugar in the raw 
14.3 ounces pectin
7.5 T lemon juice (1/2 cup)
1 t fresh nutmeg 
3 oz fresh grates ginger
1/4 cup homemade bourbon vanilla


My first time canning!!! 

Clean jars with soap 

Bring h2O to 180 degrees 

Submerge jars and kids in 180 degree water

Fill jars with 1/4 inch head space

Boil jars 10 minutes Rollin boil 

Remove and space 1-2" apart on towel 

Check lids they should not push down 

2 month life opened in fridge
1 year unopened not in fridge 



Corn muffin

Makes 12

1 cup flour
1 cup corn flour 
1t salt
2t powder
1/2 t soda 

1/2 cup butter
1-2 cup sugar

1/4 cup honey
2 eggs

1/2 c buttermilk 
1 8.5 oz cream corn

Optional 
6 jalapeños 
2T hot chili sauce 

Gather ingredients 
Preheat oven 400
Whisk together dry 
Cream butter & sugar 
Add eggs and honey to creamed mixture

Then add dry 

Add cream corn and buttermilk


Put in muffin cups 
( some of mine have jalapeños!) 

Bake 14-18 min until done
Eat

Vegetarian chili




Vegetarian chili 

1 yellow onion 
1/2 red onion

2 red peppers
1 green pepper

2 t cumin
1 t salt
1 t cayenne
1 T oregano
1/2 bunch of garlic

3 bottles pumpkin porter

1 can kidney
1 can black 
1 can garbanzo 
1/2 can cream corn
1 can sweet corn

2 chipte adobe peppers (so good!)

Large can crushed tomatoes
2 cans rotel diced tomatoes 
1 can pumpkin
1 can veggie refried beans
1/2 - 3/4 cup maple syrup

Top with: 
Chopped scallions
Plain Greek yogurt 
And shredded cheese 
(Optional peanuts and more maple syrup!)


Start heating oil and cooking onions until translucent in Dutch oven 

Then chop peppers add to onion mixture on stove and cook @ 3 minutes 

Add spices and garlic cook til well scented 

Add 2 bottles pumpkin porter and reduce to desired. I did about 1/3 

Add corn and beans 

Add chopped peppers and other beer

Add the rest

Hot toddy



Hot toddy

1 oz whiskey (portions w/e)

1 cup water

1 cinnamon stick

3 cloves 

1 T lemon juice

2 t honey 

Fresh slices lemon for garnish


Heat the water to a boil
Remove from heat and steep lemon juice, honey, cinnamon, and cloves for 7 minutes 

Then remove cinnamon. And cloves
Portion into glass
Add whiskey
Add lemon 
Done! 
Drink
