Vegetarian chili




Vegetarian chili 

1 yellow onion 
1/2 red onion

2 red peppers
1 green pepper

2 t cumin
1 t salt
1 t cayenne
1 T oregano
1/2 bunch of garlic

3 bottles pumpkin porter

1 can kidney
1 can black 
1 can garbanzo 
1/2 can cream corn
1 can sweet corn

2 chipte adobe peppers (so good!)

Large can crushed tomatoes
2 cans rotel diced tomatoes 
1 can pumpkin
1 can veggie refried beans
1/2 - 3/4 cup maple syrup

Top with: 
Chopped scallions
Plain Greek yogurt 
And shredded cheese 
(Optional peanuts and more maple syrup!)


Start heating oil and cooking onions until translucent in Dutch oven 

Then chop peppers add to onion mixture on stove and cook @ 3 minutes 

Add spices and garlic cook til well scented 

Add 2 bottles pumpkin porter and reduce to desired. I did about 1/3 

Add corn and beans 

Add chopped peppers and other beer

Add the rest
