Cornish hen noodle soup



1.5 # Cornish hen
3T whole grain mustard 
3 T butter
 1 T thyme 
1/3 t sage
2T olive oil 

1 onion 
2T olive oil

Bunch of carrots
Bunch of celery 
Bunch of parsnip

1 garlic bunch 

1 quart chicken broth

Fresh parsley bunch
1/2 bunch scallions 
Salt pepper

1/2 bag of medium sized egg noodles 


Start cooking the Cornish hen.. 425 for about 30 minutes. Cover with the mustard butter sage thyme and set in olive oil roasting pan. Baste after 30 minutes. After 40 minutes and after 50 minutes. Takes about 1 hour. (Looking for 165-170 on meat thermometer!) 


Start softening onions in olive oil, then add celery carrots and parsnip. (Dice kinda on the small-medium side!) 


While softening prep garlic and herb mixtures 

Then chicken should be almost done! 
Start shredding off the meat. (Add garlic to pot of veggies about 1 minute and then turn off until ur done hen!)


Add chicken to veggie pot. And combine. 
Then add salt, pepper, broth and herbs. Bring to boil, then simmer 10-15 minutes. 
(Meanwhile cook the eggy noodles!)


Then eat it!! 
I crushed some ritz crackers on of course! Childhood fav! Home style! Yum!

Black bean dip


Black bean dip
(Spread!)

1 bunch green onions
2T olive oil
2 t cumin
2 t coriander

2 cans black beans 
1/3 cup water

1/4 cup lime juice
2 adobe peppers
2 t salt

1/2 cup sourcream 
1 deseeded jalapeño 

1/4 cup maple syrup

Cook onions and spice for 2 minutes in oil


Add the beans and water and cool until evaporated. Then let cool 5 minutes. 
Blender with lime, salt, and adobe.



Then add sourcream and jalapeño and maple syrup


Enjoy! Dip or spread on!!!

No mayo egg salad


No mayo egg salad 
No mayonnaise egg salad 

5 eggs

3/4 cup hummus 
1/2 - 3/4 cup Greek yogurt PLAIN
1 t dry mustard
1/2 t cayenne 
1/2 t celery salt
2T whole grain mustard
2T maple syrup 
Salt & peppah 


Combine everything but the eggs

Then add solids. 
(I omitted the scallions, celery, almonds and dill from the recipe, because it wasn't necessary!!) 

It's a replica of mayonnaise.. It's delicious and good for you 



Whole wheat buttermilk pancakes



Whole wheat  buttermilk pancakes 
(With blueberry ginger jam!)

2 eggs
2 T powder
1/4 cup brown sugar
1/4 cup oil 
2t vanilla 
1 1/2 cup buttermilk
1 cup whole wheat
1 cup white wheat
1 t salt
4-8 T water

Mix eggs oil and sugar until smooth 
Then add flour and buttermilk.
Then use water to thin down to pancake consistency!

Peanut chili cheese crusted salmon





Peanut chili cheese ciabatta crusted salmon 

1 # salmon! (Portion however) 
2T mustard 
Salt and pepper

1 liquid cup of peanuts (Bahahaha, see photo!) 
1/2 a batard of chili cheese loaf 
1-2 T Siracha 
Pepper 
(No salt, peanuts were salted and roasted) 
1/4 cup maple syrup 

10 oz mushrooms for a side!!! Yum! 

Chop peanuts and ciabatta in blender and preheat oven to 425 

Add Siracha, 2T maple, and pepper


Skin side down, apply mustard to salmon and season , start heating 3T maple in pan on medium heat 

Apply crust 


Put salmon in pan seer skin 4 min then. Bake 9 minutes uncovered 

Start cooking mushrooms however you want , when salmon is done let rest 10 minutes under foil 
Then!!! Eat it!

Tatter tot hash



Tatter tot hash

1 package breakfaste sausage 
(We used chicken maple apple sausage!)
1 shallot
3 jalapeños (deseeded)
1/2 bag tater tots
1-2 eggs each 
1 bunch scallions
6 oz aged cheddar 
6 oz jalapeño cream cheese
Salt pepper butter 

Cook tater tots in oven and chop / cook sausage 

Chop shallot and add with sausage 

Chop jalapeños and shred cheese but wait for taters. 


Then combine all in a bowl with salt pepper and add to buttered pan, cover and let melt together! (Cook up an egg here!) 

Plate and devour!!
